Method
1. Add bacon to a clean Dutch oven
2. Cook until crispy - medium heat
3. Add onion, smoked paprika and salt & pepper
4. Cook while stirring occasionally - approx 5 min
5. Add brown sugar, bourbon and chicken stock and mix to combine
6. Simmer mixture until thickened while stirring occasionally - approx 10 min
7. Add more bourbon and chicken stock and stir to combine
8. Reduce until thickened while stirring occasionally - approx 10 min
9. Blend with stick blender until smooth
10. Cook until thick - approx 10 min, low heat
11. Let cool the jam
12. Add butter to the bottom of a clean jar and cover with bacon jam
