Method
1. Pre-heat oven - 190°C
2. Add cake flour and powdered sugar to a clean medium bowl
3. Whisk briefly then set aside
4. Add egg white, cream of tartar and salt to a clean large mixing bowl
5. Whisk until foamy - medium speed
6. Whisk until soft peaks form - high speed
7. Add granulated sugar to a clean small bowl
8. Whisk sugar mixture into batter gradually
9. Add vanilla extract and almond extract to the batter
10. Whisk until stiff peaks form
11. Fold dry ingredients into batter bit by bit and mix until just combined
12. Transfer batter to tube pan
13. Bake until springy to touch - 35 min, 190°C
14. Let cool
