Banana muffins with a cinnamon streusel topping, perfect with coffee or as a breakfast treat!

  • 1. Pre-heat oven - 170°C
  • 2. Line a clean muffin pan with paper liners or parchment paper
  • 3. Add salted butter, all purpose flour, light brown sugar, ground cinnamon and rolled oats to a clean medium bowl
  • 4. Mix firmly until coarse crumbs form then set aside
  • 5. Add salted butter to a clean small bowl
  • 6. Heat in microwave or on the stove until melted and set aside
  • 7. Add bananas to a clean large mixing bowl and mash with a fork
  • 8. Add granulated sugar and egg to the large mixing bowl
  • 9. Add melted butter and mix
  • 10. Add all purpose flour, baking powder, baking soda and salt to a clean medium bowl
  • 11. Whisk briefly until blended
  • 12. Fold dry ingredients into the banana-egg mixture and mix gently until just combined
  • 13. Spoon batter into muffin pan filling cups 2/3 full
  • 14. Sprinkle with the streusel topping
  • 15. Bake 22 min, 170°C until skewer tests clean
