Everything-Free Chocolate Chip Cookies

A cookie for everyone! Free from gluten, dairy, and refined sugar, but packed full of tasty almonds, coconut and cacao nibs. (Gluten-Free, Vegan)

  • Vanilla extract icon

  • Unsweetened shredded coconut icon

  • 1. Pre-heat oven - 150°C
  • 2. Line 2 clean baking sheets with parchment paper
  • 3. Add coconut oil, maple syrup and vanilla extract to a clean saucepan
  • 4. Warm on low heat
  • 5. Add ground almonds, unsweetened shredded coconut, cacao nibs, almonds, baking soda and sea salt to a clean large mixing bowl
  • 6. Add orange zest
  • 7. Transfer wet ingredients to dry ingredients and mix until well combined
  • 8. Add a little almond milk if mix is too dry to bind well
  • 9. Shape into round, slightly thick cookies
  • 10. Transfer cookies to 2 baking sheets leaving lots of space between cookies
  • 11. Bake until golden brown - approx 12 min, 150°C
  • 12. Let cool approx 10 min
