    Method

  • 1. To a microwave-safe dish add the peeled and quartered potatoes.
  • 2. Add an inch of cold water to the dish and cover the dish with microwave-safe plastic wrap or a microwave-safe plate.
  • 3. Microwave at 1000W (High) for 8 minutes or until the potatoes are cooked through.
  • 4. Drain the cooked potatoes and add them to a mixing bowl.
  • 5. Add the butter, milk, salt and pepper to the potatoes.
  • 6. Using a potato masher or fork mash everything together until just combined.
  • 7. Taste here for seasoning and add more salt and pepper if needed. Leave the mashed potatoes to the side.
  • 8. To a 6-7 inch microwave-safe baking dish, add the onions, oil and salt.
  • 9. Microwave at 1000W (High) for 2 minutes to soften the onions.
  • 10. Add the ground mince and crushed garlic. Mix to combine.
  • 11. Microwave at 1000W (High) for 2 minutes.
  • 12. Mix with a fork to break up any large pieces of mince and microwave at 1000W (High) for 2 more minutes.
  • 13. Disolve the stock cube in hot water and add to the meat.
  • 14. Add the peas and optional red wine and mix to combine.
  • 15. Add the potatoes in a layer onto the mince and gravy mixture and using a fork scrape the top of the mixture.
  • 16. Prepare the wire rack and place the dish on top.
  • 17. Broil on Broil 1 for 10 mins.
  • 18. Let rest for 5 mins and serve.
