Method
1. Add the butter to a large microwave-safe bowl
2. Microwave at 1000 W (High) for 20 seconds or until the butter is melted
3. Add the flour to the melted butter and mix together to form a paste
4. Add the milk and whisk to combine
5. Microwave at 1000 W (High) for 2 mins
6. Whisk well
7. Microwave at 1000 W (High) for 30 seconds
8. Whisk for 10 seconds to remove any lumps
9. Microwave at 1000 W (High) for a further 30 seconds
10. Whisk in the grated cheddar and season generously with some salt, pepper and a pinch of nutmeg
11. Whisk until the cheese has melted and set the cheese sauce to the side
12. Add the breadcrumbs, melted butter, grated cheese to a large mixing bowl and season with salt and pepper
13. Mix well to combine and set aside
14. Add the cauliflower florets to a baking dish
15. Pour the cheese sauce over the cauliflower and mix to combine
16. Cover the cauliflower and cheese mix with the breadcrumbs
17. Place baking dish onto the wire rack and cook on Combo 1 for 17 minutes
18. Serve hot straight away or reheat for when needed
