These cocoa cookies are great for cutting into festive shapes. We've sandwiched them with apricot jam here, but they're also delicious on their own, or dipped in melted chocolate.

  • All purpose flour icon

    Method

  • 1. Add all purpose flour, granulated sugar, cocoa powder, ground cinnamon and salt to a clean large mixing bowl
  • 2. Whisk briefly
  • 3. Add unsalted butter to the large mixing bowl
  • 4. Rub in until coarse crumbs form
  • 5. Add egg to the large mixing bowl
  • 6. Mix briefly until dough forms
  • 7. Wrap with plastic wrap
  • 8. Chill in fridge - 1 hr
  • 9. Pre-heat oven - 175°C
  • 10. Line 2 clean baking sheets with parchment paper
  • 11. Roll out large mixing bowl on lightly-floured surface
  • 12. Cut out
  • 13. Transfer content of large mixing bowl to 2 baking sheets
  • 14. Bake - 8 min, 175°C
  • 15. Let cool
  • 16. Assemble jam with the cookies
