Buckwheat Blini

Light and fluffy buckwheat blini. Top with smoked salmon and caviar for sophisticated canapés, or serve with poached eggs for a delicious weekend brunch.

  • 1. Add dried yeast, granulated sugar and milk to a clean large mixing bowl
  • 2. Mix until combined
  • 3. Mix in the flour
  • 4. Let rest - 10 min
  • 5. Add all purpose flour, buckwheat flour and salt to a clean medium bowl; whisk briefly then set aside
  • 6. Add milk to the yeast mixture
  • 7. Combine the dry and wet ingredients
  • 8. Add unsalted butter to a clean small glass bowl
  • 9. Melt in microwave - low heat
  • 10. Add the melted butter to batter, whisk batter until well combined and cover
  • 11. Let rise until doubled - approx 2 hr
  • 12. Stir, add egg yolks to the batter and mix again
  • 13. Add egg whites to a clean medium bowl
  • 14. Whisk until stiff peaks form
  • 15. Fold egg whites into batter gently until combined
  • 16. Heat unsalted butter in a skillet pan
  • 17. Add small ladles of batter into the pan and fry until golden brown - approx 2 min
  • 18. Serve immediately
