    Method

  • 1. Pre-heat oven - 180°C / 355°F
  • 2. Line a clean baking sheet with parchment paper
  • 3. Melt chocolate in microwave - low heat
  • 4. Add egg yolk and granulated sugar to a clean large mixing bowl
  • 5. Beat until light and fluffy
  • 6. Add egg white to a clean large mixing bowl
  • 7. Whisk until stiff peaks form
  • 8. Fold the melted chocolate into the egg yolk and sugar mixture
  • 9. Fold egg whites into batter gently until combined
  • 10. Transfer batter to baking sheet
  • 11. Bake - 15 min, 180°C / 355°F
  • 12. Cover with kitchen towel and let cool
  • 13. Add cranberries, orange, cloves and cinnamon stick to a clean saucepan
  • 14. Cook until soft - 10 min
  • 15. Remove cinnamon stick and add granulated sugar
  • 16. Stir until dissolved
  • 17. Let cool completely
  • 18. Add mascarpone cheese and grand marnier to a clean medium bowl
  • 19. Whisk until well combined
  • 20. Turn out cake onto a parchment paper dusted with powdered sugar
  • 21. Peel off the original parchment paper
  • 22. Spread mascarpone mixture over cake
  • 23. Cover with cooled cranberries
  • 24. Roll
  • 25. Chill in fridge
  • 26. Slice
