This rich creamy lemony dessert is so quick to put together and a firm favourite. You can also prep this the day before, so a great dessert to make for a dinner party

  • Heavy cream icon
    Heavy cream200 ml
  • Lemon icon
    Lemon½zest of
  • Lemon icon
    Lemon1juice of
  • Sugar icon
    Sugar40 g
  • Raspberries icon
    Raspberriesas needed
    Method

  • 1. Add cream, lemon zest, juice and sugar to a deep microwave-safe dish
  • 2. Mix to combine
  • 3. Microwave at 1000 W (High) for 1.5 mins
  • 4. Using a spatula mix the cream mixture
  • 5. Microwave at 1000 W (High) for a further 1.5 mins
  • 6. Mix the cream mixture again
  • 7. Microwave at 1000 W (High) for 1.5 mins
  • 8. Mix for the final time
  • 9. Heat at 1000 W (High) for final 1.5 mins
  • 10. Let the mixture cool slightly for 5 mins
  • 11. Pour the mixture into two small cocktail glasses or similar
  • 12. Pop in the fridge for 2-24 hours or until the posset is set
  • 13. Serve with fresh raspberries on top
