Method
1. Add cream, lemon zest, juice and sugar to a deep microwave-safe dish
2. Mix to combine
3. Microwave at 1000 W (High) for 1.5 mins
4. Using a spatula mix the cream mixture
5. Microwave at 1000 W (High) for a further 1.5 mins
6. Mix the cream mixture again
7. Microwave at 1000 W (High) for 1.5 mins
8. Mix for the final time
9. Heat at 1000 W (High) for final 1.5 mins
10. Let the mixture cool slightly for 5 mins
11. Pour the mixture into two small cocktail glasses or similar
12. Pop in the fridge for 2-24 hours or until the posset is set
13. Serve with fresh raspberries on top
