These red wine prunes are inspired by one of my favourite restaurants in Dublin, Etto. They are sweet, and delicious and all the right textures. They also make your whole house smell like the holidays which is ...

    Ingredients

  • Pitted prunes icon
    Pitted prunes90 g
  • Red wine icon
    Red wine240 ml
  • Ground cinnamon icon
    Ground cinnamon1 teaspoon
  • Vanilla bean paste icon
    Vanilla bean paste1 teaspoon
  • Ground nutmeg icon
    Ground nutmeg1 pinch
  • Mascarpone cheese icon
    Mascarpone cheese50 g
    Method

  • 1. In a microwave safe bowl add the prunes, red wine, cinnamon, vanilla , nutmeg and mix to combine
  • 2. Place a microwave safe lid or plate on top and microwave 10 mins
  • 3. While prunes are in the microwave mix mascarpone with the vanilla seeds
  • 4. To serve, add the vanilla mascarpone to a bowl and add the warm prunes and wine jus on top
