Soft Ginger-Bread and Chocolate Chip Cookies

A great combination of chocolate and spices, these gingery cookies are best eaten on the same day.

  • Cocoa powder icon

  • Baking soda icon

  • Nutmeg icon

  • Unsalted butter icon

  • Dark brown sugar icon

  • 1. Line 2 clean baking sheets with parchment paper
  • 2. Add all purpose flour, ground ginger, ground cinnamon and ground cloves to a clean medium bowl
  • 3. Add cocoa powder, baking soda and nutmeg to the dry ingredients
  • 4. Whisk briefly until combined then set aside
  • 5. Add unsalted butter, ginger and dark brown sugar to a clean large mixing bowl
  • 6. Cream together
  • 7. Add molasses to the sugar mixture
  • 8. Mix until combined
  • 9. Add all the dry ingredients to the large mixing bowl and mix well
  • 10. Add chocolate chips
  • 11. Combine the chocolate chips into the dough
  • 12. Chill in fridge - 1 hr
  • 13. Pre-heat oven - 160°C
  • 14. Scoop cookie mixture onto 2 baking sheets
  • 15. Sprinkle with granulated sugar
  • 16. Bake - 10 min, 160°C
  • 17. Transfer onto cooling rack
