Light as air, these heavenly cupcakes need only a sprinkling of powdered sugar or a dollop of whipped cream to complete them.


  • Plain flour icon

  • Cream of tartar icon
    Cream of tartar1 ½ teaspoons

  • 1. Pre-heat oven - 190°C
  • 2. Line 2 clean muffin pans with paper muffin cups
  • 3. Add plain flour and powdered sugar to a clean medium bowl
  • 4. Whisk briefly and set aside
  • 5. Add egg white, vanilla extract, cream of tartar and salt to a clean large mixing bowl
  • 6. Beat until foamy - medium speed
  • 7. Beat until soft peaks form - high speed
  • 8. Add granulated sugar to a clean small bowl
  • 9. Whisk sugar mixture into batter gradually and beat until stiff peaks form
  • 10. Fold dry ingredients into batter gradually and mix until just combined
  • 11. Transfer batter to 2 muffin pans
  • 12. Bake until springy to touch - 10 min
  • 13. Transfer onto cooling rack
  • 14. Decorate with sieve
