Strawberry Ice Cream

Properly smooth and sweet strawberry ice cream with bits of whole strawberries throughout.


  • Egg yolk icon

  • Granulated sugar icon
    Granulated sugar150 g
  • Milk icon
    Milk400 g
  • Heavy cream icon
    Heavy cream400 g
  • Salt icon
    Salt1 pinch
  • Strawberries icon
    Strawberries500 gchopped

  • 1. Add egg yolk and granulated sugar to a clean medium bowl
  • 2. Whisk together until pale and light
  • 3. Add milk, heavy cream and salt to the mixture
  • 4. Whisk well until thick
  • 5. Transfer mixture to saucepan
  • 6. Heat gently until thick
  • 7. Let cool medium bowl completely
  • 8. Refrigerate in fridge until completely cool
  • 9. Add strawberries to a clean large mixing bowl
  • 10. Mix in granulated sugar to the fruit
  • 11. Purée half until smooth
  • 12. Fold fruit into medium bowl
  • 13. Churn in ice cream maker until thick
  • 14. Add content of large mixing bowl to mixture
  • 15. Churn in ice cream maker until well combined - approx 5 min
  • 16. Freeze until hard
