Traditional crumbly peanut cookies, topped with a whole peanut, a favourite for Lunar New Year celebrations.

  • Egg yolk icon

  • Powdered sugar icon
    Powdered sugar120 g
  • Peanut oil icon
    Peanut oil240 ml
  • Coconut oil icon
    Coconut oil2 tablespoons
  • Peanuts icon
    Peanuts600 groasted

    Method

  • 1. Pre-heat oven - 170°C / 340°F
  • 2. In a food processor, grind peanuts until fine
  • 3. Add powdered sugar, peanut oil and coconut oil to the food processor bowl
  • 4. Blend until dough forms
  • 5. Roll the dough into balls
  • 6. Transfer balls to 2 baking sheets and flatten slightly
  • 7. Top each cookie with a whole peanut
  • 8. Brush each cookie with the beaten egg yolk
  • 9. Bake cookies until light golden - 15 min, 170°C / 340°F
  • 10. Transfer onto cooling rack
