    Method

  • 1. Pre-heat oven - 170°C / 340°F
  • 2. Line 2 clean baking sheets with parchment paper
  • 3. Add unsalted butter and granulated sugar to a clean large mixing bowl
  • 4. Cream together until smooth
  • 5. Add egg and mix
  • 6. Add all purpose flour, baking powder and poppy seeds to a clean medium bowl and whisk until blended
  • 7. Add dry ingredients to dough
  • 8. Add lemon zest and juice
  • 9. Mix until just combined
  • 10. Scoop dough onto 2 baking sheets
  • 11. Bake until golden brown - 12 min, 170°C / 340°F
  • 12. Let cool until firm - 5 min
  • 13. Transfer onto cooling rack
