Dulce de leche caramel is made by carmelizing milk and sugar. Use full-fat milk for best results, or try coconut or goat's milk. Spread on cookies, cakes, in coffee...or make Alfajores!

  • Milk icon

  • Granulated sugar icon
    Granulated sugar200 g
  • Bicarbonate of soda icon
    Bicarbonate of soda¼ teaspoon
    Method

  • 1. Add milk, granulated sugar and bicarbonate of soda to a clean saucepan
  • 2. Heat until boiling - high heat
  • 3. Reduce - low heat
  • 4. Simmer until thick - approx 3 hr, low heat
  • 5. Blend with stick blender until smooth
