This simple herb loaf is especially good with soups and stews, but is also great for making sandwiches. If you don't have fresh herbs, use dried.

  • Bicarbonate of soda icon

  • Fresh thyme icon

  • 1. Pre-heat oven - 175°C
  • 2. Grease a clean loaf pan
  • 3. Add buttermilk, egg and olive oil to a clean medium bowl then set aside
  • 4. Add plain flour, granulated sugar, salt, baking powder, bicarbonate of soda and fresh thyme to a clean large mixing bowl
  • 5. Whisk briefly until combined
  • 6. Transfer wet ingredients to dry ones
  • 7. Mix until dough forms
  • 8. Transfer dough to loaf pan
  • 9. Bake until golden brown - 40 min, 175°C
  • 10. Let cool onto cooling rack
