    Method

  • 1. Pre-heat oven - 175°C / 350°F
  • 2. Line a clean muffin pan with paper muffin cups
  • 3. Add plain flour, baking powder and salt to a clean medium bowl
  • 4. Whisk briefly until blended
  • 5. Add unsalted butter, light brown sugar and vanilla extract to a clean large mixing bowl
  • 6. Cream together
  • 7. Add egg to the batter and mix until well combined
  • 8. Transfer dry ingredients to batter and mix until just combined
  • 9. Add flaked coconut, chocolate chips, walnuts and dried cranberries and mix batter until combined
  • 10. Spoon batter into muffin pan
  • 11. Bake until golden brown - 25 min, 175°C / 350°F
  • 12. Let cool
