Method
1. Pre-heat oven - 150°C
2. Line 2 clean baking sheets with parchment paper
3. Add coconut oil, maple syrup and vanilla extract to a clean saucepan
4. Warm on low heat
5. Add ground almonds, unsweetened shredded coconut, cacao nibs, almonds, baking soda and sea salt to a clean large mixing bowl
6. Add orange zest
7. Transfer wet ingredients to dry ingredients and mix until well combined
8. Add a little almond milk if mix is too dry to bind well
9. Shape into round, slightly thick cookies
10. Transfer cookies to 2 baking sheets leaving lots of space between cookies
11. Bake until golden brown - approx 12 min, 150°C
12. Let cool approx 10 min
