  • Olive oil icon
    Olive oil1 tablespoon
  • Butternut pumpkin icon
    Butternut pumpkin750 gchopped
  • Sweet potato icon
    Sweet potato250 gchopped
  • Vegetable stock icon
    Vegetable stock500 ml
  • Parmesan cheese icon
    Parmesan cheese50 gfinely grated
  • Black pepper icon

    Method

  • 1. Add olive oil, butternut pumpkin, sweet potato and vegetable stock to a clean large saucepan
  • 2. Heat while stirring occasionally - 10 min, medium heat
  • 3. Boil, then reduce to low and simmer for 8 min
  • 4. Add parmesan cheese and boil for another 2 min
  • 5. Season with black pepper
  • 6. Transfer soup to blender jug
  • 7. Blend until smooth - approx 2 min
  • 8. Serve
