Chocolate Sorbet

The darkest chocolate makes a very smooth, intensely flavored non-dairy sorbet. If you don't have an ice cream maker, just stir well every few hours as it freezes. Try sprinkling with flaked sea salt to serve.


  • Water icon
    Water780 ml
  • Sugar icon
    Sugar200 g
  • Cocoa powder icon
    Cocoa powder65 g
  • Salt icon
    Salt1 pinch
  • Semisweet chocolate icon
    Semisweet chocolate170 gfinely chopped
  • Vanilla extract icon
    Vanilla extract½ teaspoon

  • 1. Add water, sugar, cocoa powder and salt to a clean saucepan
  • 2. Whisk briefly
  • 3. Heat and boil until thick
  • 4. Mix in semisweet chocolate to the mixture and set aside
  • 5. Add water and vanilla extract to the mixture
  • 6. Transfer to a blender jug
  • 7. Blend mixture briefly until smooth
  • 8. Chill mixture thoroughly in fridge
  • 9. Transfer mixture to ice cream maker bowl
  • 10. Churn in ice cream maker
  • 11. Freeze until firm
