    Method

  • 1. Pre-heat oven - 190°C / 375°F
  • 2. Grease a clean muffin pan
  • 3. Add powdered sugar, all purpose flour and ground almonds to a clean medium bowl mix briefly until blended
  • 4. Add egg white to the batter one by one
  • 5. Melt butter in the pan
  • 6. Let cool a clean small bowl
  • 7. Mix in melted butter with the batter until well combined
  • 8. Transfer batter to muffin pan
  • 9. Add a few berries to each cake and press gently until almost submerged
  • 10. Bake - 5 min, 190°C / 375°F
  • 11. Reduce the temperature and bake until golden brown - 15 min, 170°C / 340°F
  • 12. Let cool - approx 5 min
  • 13. Transfer to a cooling rack and leave until completely cool
  • 14. Dust with powdered sugar
