Simple, sweet, and fruity blueberry cobblers that come together in minutes. The batter will travel down into the blueberries and make a delicious little rustic pudding-like cake.

    Method

  • 1. Pre-heat oven - 170°C
  • 2. Add blueberries, granulated sugar, cornstarch and lemon to a clean medium bowl
  • 3. Mix together until combined
  • 4. Transfer fruit to 8 ramekins
  • 5. Add granulated sugar, all purpose flour and salt to a clean large mixing bowl
  • 6. Whisk together
  • 7. Add unsalted butter
  • 8. Rub in hands until coarse crumbs form
  • 9. Add egg to the batter
  • 10. Mix in buttermilk to the batter until just combined
  • 11. Drop batter into the ramekins
  • 12. Bake - 25 min
  • 13. Serve
