    Method

  • 1. Add dried navy beans and water to a clean large mixing bowl
  • 2. Soak overnight in water
  • 3. Drain with sieve
  • 4. Transfer to a clean Dutch oven
  • 5. Add water to the beans until covered
  • 6. Add baking soda and onion to the beans
  • 7. Heat until boiling
  • 8. Simmer - 15 min
  • 9. Pre-heat oven - 120°C
  • 10. Add bacon, ground cloves, cayenne pepper, molasses, brown sugar, salt and dijon mustard to a clean small bowl and mix
  • 11. Add mixture to beans
  • 12. Stir well until combined
  • 13. Cover with foil
  • 14. Bake - approx 5 hr, 120°C
  • 15. Serve
