A light-as-air meringue, dressed up here with whipped cream, roasted kiwi fruit, and pistachios... use any seasonal fruits! Make in advance for an easy dinner party dessert.


  • Cornstarch icon
    Cornstarch1 teaspoon
  • Vanilla extract icon
    Vanilla extract½ teaspoon
  • White vinegar icon
    White vinegar½ teaspoon
  • Superfine sugar icon
    Superfine sugar250 g
  • Egg white icon
    Egg white4
  • Kiwi icon
    Kiwias neededpeeled, chopped
  • Pistachios icon
    Pistachiosas neededchopped
  • Whipped cream icon
    Whipped creamas needed

  • 1. Pre-heat oven - 150°C
  • 2. Line a clean baking sheet with parchment paper
  • 3. Add cornstarch, vanilla extract and white vinegar to a clean small bowl
  • 4. Whisk in superfine sugar and set aside
  • 5. Add egg whites to a clean large mixing bowl
  • 6. Whisk until stiff peaks form
  • 7. Mix sugar mixture into the egg whites gradually
  • 8. Mix until combined
  • 9. Transfer meringue to baking sheet
  • 10. Bake - 50 min, 150°C
  • 11. Let cool
  • 12. Garnish
