These traditional Irish potato breads are a perfect complement to a hearty breakfast. Top with poached eggs and spinach. A great way to use leftover mashed potatoes.

  • Potato icon

    Method

  • 1. Add potato and salt to a clean large saucepan
  • 2. Cover with water
  • 3. Heat until boiling
  • 4. Simmer until tender - approx 10 min
  • 5. Drain well
  • 6. Mash with potato masher until smooth
  • 7. Add salted butter, all purpose flour and egg to the dough
  • 8. Season with black pepper
  • 9. Stir together until completely mixed
  • 10. Turn out on lightly-floured surface
  • 11. Divide into halves
  • 12. Roll out
  • 13. Cut into quarters
  • 14. Cook in frying pan until golden brown - medium heat
  • 15. Serve immediately
