A satisfyingly sticky English-style steamed pudding. This lighter version is low in fat, and free from refined sugars. Serve warm. (Dairy-Free, Low-Fat)

    Method

  • 1. Pre-heat oven - 171°C
  • 2. Add dates and water to a clean saucepan
  • 3. Simmer - 5 min
  • 4. Add maple syrup and vanilla extract to a clean medium bowl
  • 5. Transfer fruit to syrup
  • 6. Blend until smooth
  • 7. Add egg yolk, all purpose flour, baking powder, ginger and orange to a clean medium bowl
  • 8. Add syrup to batter
  • 9. Mix until well combined
  • 10. Add egg white to a clean large mixing bowl
  • 11. Whisk until stiff peaks form
  • 12. Fold egg whites into batter
  • 13. Grease 4 clean ramekins
  • 14. Add maple syrup to the ramekins
  • 15. Pour batter into 4 ramekins
  • 16. Wrap tightly with foil
  • 17. Place in water bath
  • 18. Bake - 1 hr, 171°C
  • 19. Turn out
  • 20. Garnish with candied ginger
