This banana pecan loaf is based on a classic recipe with lots of banana flavor and crunchy nuts.

    Method

  • 1. Pre-heat oven - 160°C
  • 2. Grease a clean loaf pan
  • 3. Add unsalted butter to a clean small glass bowl
  • 4. Melt then set aside
  • 5. Add banana, egg, greek yogurt and dark brown sugar to a clean large mixing bowl
  • 6. Transfer content of small glass bowl to dough
  • 7. Mix until well combined
  • 8. Add all purpose flour, baking powder, pecan halves and ground cinnamon to the dough
  • 9. Fold together until combined
  • 10. Transfer dough to loaf pan
  • 11. Bake until skewer tests clean - 55 min, 160°C
  • 12. Let cool
