Honey Chocolate Madeleines

These soft, plump and indulgent little cakes are a chocolate lover's dream come true. Sweet honey balances the dark chocolate flavor.

  • 1. Grease a clean madeleine pan generously
  • 2. Add all purpose flour, baking powder and cocoa powder to a clean medium bowl then set aside
  • 3. Add egg and granulated sugar to a clean large mixing bowl
  • 4. Beat until fluffy
  • 5. Add unsalted butter to a clean medium glass bowl
  • 6. Melt - low heat
  • 7. Add honey, vanilla extract and milk to the medium glass bowl and mix
  • 8. Transfer honey syrup to the large bowl with eggs
  • 9. Mix until combined
  • 10. Sift dry ingredients into batter gradually while mixing
  • 11. Add chocolate chips to the batter and mix
  • 12. Chill in fridge - 30 min
  • 13. Pre-heat oven - 200°C
  • 14. Spoon batter into madeleine pan
  • 15. Bake until golden brown and springy to touch - 6 min, 200°C
  • 16. Turn out onto cooling rack
