I do love an authentic sweet and sour anything, made from scratch. This is that recipe. SO delicious. And no nasties. Start your year off right!

  • 1. Heat a griddle pan and drizzle with EVOO
  • 2. Cook the pineapple in batches until it's all nicely charred until charred then set aside
  • 3. To make the sauce, add yellow onion, garlic clove, red chili and extra virgin olive oil to the TM5 bowl
  • 4. Chop with MC in place 5 sec, speed 6
  • 5. Cook 5 min, Varoma, speed 1
  • 6. Remove from bowl and set aside
  • 7. Add apple cider vinegar, tomato paste, soy sauce, pineapple juice and cornstarch to the Thermomix bowl
  • 8. Mix with MC in place 5 sec, speed 6
  • 9. Add the onion mix and capsicums into the bowl
  • 10. Cook for 6 min, 100°C, reverse speed 1
  • 11. Add extra virgin olive oil to the frying pan
  • 12. Fry the chicken in a hot pan with EVOO until browned and cooked through
  • 13. To assemble, place rice noodles on a plate, top with capsicum, snow peas, grilled pineapple and chicken
  • 14. Pour sauce over the top
