Method
1. Add orange, orange, lemon, lemon, Fruity Pear Mince, raisins, dried cranberries, dried apricots, brandy, mixed nuts and candied citrus peel to the TM5 bowl
2. Mix then set aside - 2 min, 70°C, reverse speed 1
3. Cover with plastic wrap
4. Leave overnight while stirring occasionally
5. Transfer content of TM5 bowl to medium bowl
6. Add unsalted butter, dark brown sugar and treacle to the TM5 bowl
7. Blitz until light and fluffy 30 sec, speed 4
8. Scrape down sides of TM5 bowl
9. Add egg, all purpose flour, ground cinnamon, ground nutmeg, ground ginger, ground cloves and ground cardamom to the TM5 bowl
10. Mix well with MC in place 20 sec, speed 5
11. Transfer soaked fruit to TM5 bowl
12. Add dark chocolate to the TM5 bowl
13. Mix 20 sec, reverse speed 4
14. Transfer content of TM5 bowl to Dariole molds
15. Add water to the TM5 bowl
16. Set the varoma dish
17. Arrange Dariole molds
18. Steam 45 min, Varoma, speed 1
19. Transfer content of Dariole molds to plate
20. Serve
