Coconut Waffles with Salmon and Smashed Avocado

Breakfast, brunch or lunch, these coconut waffles can be served savoury or sweet. For something different, serve them with avocado, salmon and lime.

  • Shredded coconut icon

  • Coconut cream icon
    Coconut cream400 ml
  • Pink himalayan salt flakes icon
    Pink himalayan salt flakes1 pinch

    Coconut sugar20 g
  • Lime icon
    Limeas needed

  • 1. Add plain flour, shredded coconut, coconut cream, pink Himalayan salt flakes, egg, coconut sugar and butter to the TM5 bowl
  • 2. Blend with MC in place 20 sec, speed 8
  • 3. Scrape down sides of TM5 bowl
  • 4. Blend with MC in place 20 sec, speed 8
  • 5. Scrape down sides of TM5 bowl
  • 6. Let rest - 20 min
  • 7. Blend with MC in place 20 sec, speed 8
  • 8. Scrape down sides of TM5 bowl
  • 9. Heat waffle iron
  • 10. Place approx 1⁄4-1/2 cup mixture into the middle of the waffle iron and cook until golden
  • 11. Top with avocado, salmon slices, a few spring onions and a drizzle of the reserved coconut cream and serve with a lime wedge
