  • 1. Line a clean square pan with parchment paper
  • 2. Add oats, flaked coconut, chia seeds and ground flaxseed to a food processor bowl
  • 3. Blitz until fine
  • 4. Add medjool dates, peanut butter and honey to the food processor bowl
  • 5. Mix in coconut oil to the mixture
  • 6. Press the mixture into square pan
  • 7. Chill in fridge
  • 8. Add cocoa butter and honey to a clean medium glass bowl
  • 9. Heat in double boiler until melted
  • 10. Whisk in cocoa powder and mix until smooth
  • 11. Pour chocolate mixture onto the cooled base
  • 12. Sprinkle with pumpkin seeds
  • 13. Chill in fridge until firm
  • 14. Cut into bars
  • 15. Wrap individually with plastic wrap and store in the fridge!
