Method
1. Pre-heat a clean frying pan to a medium heat
2. Add chorizo to the frying pan
3. Cook with lid on, tossing occasionally until fat is rendered out and chorizo is well coloured
4. Deglaze pan with lemon juice and allow to cool in pan whilst you prepare the remainder of the salad
5. Prepare potatoes and place them into steamer dish
6. Place water into Thermomix bowl up to 1L mark
7. Steam - 35 min, Varoma, speed 3
8. Transfer potatoes to large serving bowl
9. Add all other salad ingredients, including the warm chorizo and juice
10. Garnish with Italian parsley and mint leaves
11. Drizzle with honey mustard dressing
12. Toss and serve warm
