    Method

  • 1. Add milk, active dried yeast and granulated sugar to a clean stand mixer bowl and mix
  • 2. Let rest - 15 min
  • 3. Add bread flour, all purpose flour and salt to the dough
  • 4. Mix briefly until combined
  • 5. Add egg
  • 6. Mix until dough forms
  • 7. Knead - 3 min
  • 8. Add unsalted butter to the dough
  • 9. Knead - 3 min
  • 10. Grease a clean large mixing bowl
  • 11. Transfer dough to large mixing bowl and cover
  • 12. Chill in fridge - approx 8 hr
  • 13. Prepare 2 clean baking sheets with parchment paper
  • 14. Turn out on lightly-floured surface
  • 15. Divide evenly
  • 16. Shape into balls
  • 17. Transfer dough balls to 2 baking sheets and cover
  • 18. Let rise until doubled - approx 1 hr
  • 19. Pre-heat oven - 190°C
  • 20. Add egg and milk to a clean small bowl and mix
  • 21. Brush content of 2 baking sheets with eggs
  • 22. Sprinkle with sesame seeds
  • 23. Bake until golden brown - 20 min, 190°C
