Zesty lemon and fragrant herbs combine with beautiful salmon fillets to create a light, fresh dish. Serve with steamed new potatoes and salad to create the perfect midweek meal.

    Method

  • 1. Pre-heat oven - 221°C
  • 2. Fill a clean large saucepan with water and add salt
  • 3. Boil on high heat
  • 4. Add asparagus to boiling water
  • 5. Cook until tender - 3 min
  • 6. Drain well
  • 7. Add to the medium bowl and toss with lemon zest, fresh parsley, dill and salt & pepper
  • 8. Grease a clean baking sheet with butter
  • 9. Place salmon filet on the baking sheet
  • 10. Stuff asparagus into fish
  • 11. Season with salt and pepper and squeeze lemon onto the fish
  • 12. Bake - 10 min, 221°C
  • 13. Serve
