  • 1. Add all purpose flour, baking powder, baking soda, sea salt and ground cinnamon to a clean large mixing bowl
  • 2. Whisk together
  • 3. Add buttermilk and egg yolk to a clean medium bowl and mix
  • 4. Add unsalted butter to a clean small bowl
  • 5. Melt in microwave and set aside
  • 6. Add egg white to a clean stand mixer bowl
  • 7. Whisk until stiff peaks form
  • 8. Transfer egg yolk and buttermilk mixture to dry ingredients
  • 9. Mix until combined
  • 10. Mix melted butter into the batter until combined
  • 11. Carefully mix one quarter of the egg whites into the batter until combined
  • 12. Fold the rest of the egg whites into the batter
  • 13. Heat waffle iron
  • 14. Cook wafers one by one
