A quick easy vegetarian ramen to whip up in less than 10 mins. Make it your own by adding your choice of veggies or protein as toppings

  • Bok choy icon
    Bok choy1 handfulcut into strips
  • Miso paste icon
    Miso paste2 teaspoons
  • Peanut butter icon
    Peanut butter2 teaspoons
  • Soy sauce icon

  • Maple syrup icon

  • Instant ramen noodles icon

    Method

  • 1. To a microwave safe bowl add the miso paste, peanut butter, soy sauce, sriracha, maple syrup and ginger.
  • 2. Add the water and using a hand whisk whisk the mixture together.
  • 3. Add the instant noodles and the zucchini chunks.
  • 4. Place a microwave safe plate on top.
  • 5. Microwave at 1000 W (High) for 4 minutes.
  • 6. Mix well and add the bok choy.
  • 7. Replace the plate and microwave at 1000 W (High) for a further 2 minutes.
  • 8. Add the sweetcorn and any other toppings you like and serve hot.
