Method
1. To a microwave safe bowl add the miso paste, peanut butter, soy sauce, sriracha, maple syrup and ginger.
2. Add the water and using a hand whisk whisk the mixture together.
3. Add the instant noodles and the zucchini chunks.
4. Place a microwave safe plate on top.
5. Microwave at 1000 W (High) for 4 minutes.
6. Mix well and add the bok choy.
7. Replace the plate and microwave at 1000 W (High) for a further 2 minutes.
8. Add the sweetcorn and any other toppings you like and serve hot.
