A quick and easy veggie curry for all the family to enjoy

  • Firm tofu icon

  • Spinach icon

  • Ground coriander icon
    Ground coriander1 teaspoon
  • Thai green curry paste icon
    Thai green curry paste1 ½ tablespoons
  • Canned coconut milk icon
    Canned coconut milk385 g
  • Salt icon

    Water240 ml
  • Cooked rice icon

    Method

  • 1. To a medium microwave dish add the the onion, ginger, ground coriander, oil and mix to combine.
  • 2. Microwave at 1000 W (High) for 2 mins.
  • 3. Add the curry paste, garlic, coconut milk, salt and water and mix to combine.
  • 4. Add the sweet potato and mix well.
  • 5. Microwave at 1000 W (High) for 8 mins.
  • 6. Mix and microwave for a further 2 mins.
  • 7. Add the tofu and mix well.
  • 8. Microwave at 1000 W (High) for a further 2 mins.
  • 9. Mix in the spinach and cilantro.
  • 10. Taste for seasoning.
  • 11. Serve over cooked rice and enjoy.
