Method
1. To a medium microwave dish add the the onion, ginger, ground coriander, oil and mix to combine.
2. Microwave at 1000 W (High) for 2 mins.
3. Add the curry paste, garlic, coconut milk, salt and water and mix to combine.
4. Add the sweet potato and mix well.
5. Microwave at 1000 W (High) for 8 mins.
6. Mix and microwave for a further 2 mins.
7. Add the tofu and mix well.
8. Microwave at 1000 W (High) for a further 2 mins.
9. Mix in the spinach and cilantro.
10. Taste for seasoning.
11. Serve over cooked rice and enjoy.
