A quick and easy veggie curry for all the family to enjoy

  • Onion icon

  • Sweet potato icon
    Sweet potato350 gcut into chunks
  • Firm tofu icon
    Firm tofu200 gcubed
  • Spinach icon
    Spinach2 handfulsrinsed
  • Cilantro icon
    Cilantro7 gtorn
  • Oil icon
    Oil2 teaspoons
  • Thai green curry paste icon
    Thai green curry paste1 ½ tablespoons
  • Canned coconut milk icon
    Canned coconut milk400 ml
  • Salt icon
    Saltas needed
  • Water icon
    Water150 ml
  • Cooked rice icon
    Cooked riceas needed
    Method

  • 1. To a medium microwave dish add the the onion, ginger, oil and mix to combine
  • 2. Microwave on High for 2 mins
  • 3. Add the curry paste, garlic, coconut milk, salt and water and mix to combine
  • 4. Add the sweet potato and mix well
  • 5. Microwave on High for 8 mins
  • 6. Mix and microwave for a further 2 mins
  • 7. Add the tofu and mix well
  • 8. Microwave on High for a further 2 mins
  • 9. Mix in the spinach and cilantro
  • 10. Taste for seasoning
  • 11. Serve over cooked rice and enjoy
