Method
1. Add the leeks, oil and a seasoning of salt to a large microwave-safe dish
2. Mix everything to combine and microwave at 1000 W (High) for 2 mins
3. Mix the stock cube into the leeks to dissolve the cube with the heat of the leeks
4. Add the mustard, cream, honey, crushed garlic and water to the dish and mix well to combine
5. Add in the cut chicken
6. Place the microwave-safe dish onto the wire rack and cook on Combo 1 for 10 mins
7. Mix 2 teaspoons of corn starch and 2 teaspoons of water to a small bowl to create a corn starch slurry
8. Add the corn starch slurry to the dish and mix well
9. Remove the wire rack and microwave at 1000 W (High) for 2 mins
10. Stir in some grated parmesan and taste for seasoning
11. Serve over cooked potatoes, pasta or rice
