This cheesy cauliflower is the perfect side dish to a roast dinner or holiday family meal. A favourite in the family, and a great way to encourage kids to eat some veggies

  • Cheddar cheese icon

    Milk400 ml

    Method

  • 1. Add the butter to a large microwave-safe bowl
  • 2. Microwave on high for 20 seconds or until the butter is melted
  • 3. Add the flour to the melted butter and mix together to form a paste
  • 4. Add the milk and whisk to combine
  • 5. Microwave on high for 2 mins
  • 6. Whisk well
  • 7. Microwave on high for 30 seconds
  • 8. Whisk for 10 seconds to remove any lumps
  • 9. Microwave on high for a further 30 seconds
  • 10. Whisk in the grated cheddar and season generously with some salt, pepper and a pinch of nutmeg
  • 11. Whisk until the cheese has melted and set the cheese sauce to the side
  • 12. Add the breadcrumbs, melted butter, grated cheese to a large mixing bowl and season with salt and pepper
  • 13. Mix well to combine and set aside
  • 14. Add the cauliflower florets to a baking dish
  • 15. Pour the cheese sauce over the cauliflower and mix to combine
  • 16. Cover the cauliflower and cheese mix with the breadcrumbs
  • 17. Place baking dish onto the wire rack and cook on Combo 1 for 17 minutes
  • 18. Serve hot straight away or reheat for when needed
