Once you have the pork sorted, and the soft tacos done, this is a snap! Seriously good, seriously flavourful and seriously SIMPLE. Cook Once Eat Twice.
This recipe uses pork from my Basic Pulled Pork recipe.
Ingredients
Pineapple½peeled, cored, sliced
Cilantroas neededleaves of
Lime2juice of
Red chili2sliced
Avocado1
Lime juiceas needed
Salt & pepperas needed
Extra virgin olive oilas needed
Pink himalayan saltas needed
Red cabbage¼
Red bell pepper½
Red onion¼
Black pepperas neededfreshly ground
Crème fraîche200 g
Corn tortillaas needed
Pulled pork400 g
Method
1. Mash avocado, lime juice and salt & pepper together in a small bowl
2. Heat a griddle pan to quite a high heat
3. Drizzle with oil and place the pineapple slices on the pan
4. Cook until you have a nice caramelization and you can see the griddle marks; do this on both sides
5. Remove the pineapple from the heat, sprinkle with a few salt flakes and allow to cool
6. Dice the pineapple
7. Place cabbage, bell pepper and onion into the Thermomix bowl
8. Chop - approx 3 sec, speed 5
9. Toss with cilantro, black pepper, lime juice, red chili and the pineapple
10. Assemble your tacos by spreading creme fraiche on the tortillas, topped with pulled pork, grilled pineapple slaw and smashed avocado garnishing with sliced chilli to taste
