Method
1. Make sure your ribs will fit into the varoma dish and tray
2. Place paprika, chilli flakes, cumin, coconut sugar, salt, cayenne, garlic powder and black pepper into the Thermomix bowl
3. Blend with MC fitted - 10 sec, speed 5
4. Rub this mixture all over the ribs, coating them as well as possible
5. Let rest in fridge for at least 8 hr
6. Pre-heat oven - 220°C
7. Place the ribs into the varoma dish and tray
8. Put the water into the thermomix bowl and set varoma into position
9. Steam - approx 1 hr, 100°C, speed 4
10. Transfer the ribs into an ovenproof dish and coat with the smoky bbq sauce
11. Bake until charred - 30-40 min, 220°C
12. Serve with a fresh herb salad or smoky bbq sauce
