Method
1. Pre-heat oven - 160°C
2. Line a clean baking sheet with parchment paper
3. Add brioche bread to the baking sheet
4. Slice brioche loaf thickly, about 8cm thick
5. Add egg yolk, vanilla bean paste and milk to the TM5 bowl
6. Blend - approx 10 sec, speed 10
7. Transfer content of TM5 bowl to plate
8. Soak each slice of bread in the egg mixture turning once
9. Add butter to a clean frying pan
10. Heat - medium heat
11. Cook the toast until golden on both sides
12. Place onto prepared tray and keep in the oven until ready to serve. (No longer than 20 minutes.)
13. Add egg white, cream of tartar and sea salt to the TM5 bowl
14. Whisk - approx 4 min, 37°C, speed 3
15. Then add golden caster sugar to the TM5 bowl slowly
16. Whisk - approx 6 min, 50°C, speed 3
17. Serve
18. Garnish with strawberry jam, lemon curd and mixed berries
