Brioche French Toast with Swiss Meringue

Brioche French Toast can always get more decadent the minute meringue is mentioned! Are you ready for a little taste of international food heaven?

  • 1. Pre-heat oven - 160°C
  • 2. Line a clean baking sheet with parchment paper
  • 3. Add brioche bread to the baking sheet
  • 4. Slice brioche loaf thickly, about 8cm thick
  • 5. Add egg yolk, vanilla bean paste and milk to the TM5 bowl
  • 6. Blend - approx 10 sec, speed 10
  • 7. Transfer content of TM5 bowl to plate
  • 8. Soak each slice of bread in the egg mixture turning once
  • 9. Add butter to a clean frying pan
  • 10. Heat - medium heat
  • 11. Cook the toast until golden on both sides
  • 12. Place onto prepared tray and keep in the oven until ready to serve. (No longer than 20 minutes.)
  • 13. Add egg white, cream of tartar and sea salt to the TM5 bowl
  • 14. Whisk - approx 4 min, 37°C, speed 3
  • 15. Then add golden caster sugar to the TM5 bowl slowly
  • 16. Whisk - approx 6 min, 50°C, speed 3
  • 17. Serve
  • 18. Garnish with strawberry jam, lemon curd and mixed berries
